DIRECTIONS: What’s Interesting” writing assignments ask you to think about a specific question related to a chapter, and write a short essay that provides a full answer, indicating that you’ve been reading and thinking independently. An average response from a student would be two well-formed paragraphs, but since the essays are a substantial part of the course grade, putting in extra effort on these essays will have a significant effect on your course grade. I’m expecting you to read well and think about the content before you write, providing a thorough analysis in your own words that demonstrates learning and effort, organized thought, and careful attention to writing mechanics.

DIRECTIONS AND ESSAY TOPIC—-The textbook section titled "Proteins" discusses the different orders of protein structure. Why do you think it is that you can "cook" a pot roast (as in the textbook example, where the meat proteins are altered by heating), but you can’t "uncook" a potroast (and restore the proteins to their original form)?
